Gobhi Aloo ki Sabzi

Cauliflower and potato(Aloo gobhi) is a classic Indian dish made with cauliflower, potato and common Indian spices.

This is a quick stir fried lighter version of the dish and pairs very well with rotis, parathas or poori.

Ingredients

  • Cauliflower- 1 cup(cut into florets)
  • Potatoes – 2 small (cut lengthwise)
  • Tomato- 1/2 sliced
  • Onion – 1 small (thinly sliced)
  • Green chili- 1 small (julienned)
  • Ginger – 1 inch sliced
  • Red chili powder- 1/2 tsp (to taste)
  • Coriander powder – 1/2 tsp
  • Garam masala powder – 1/2 tsp
  • Salt – to taste

Instructions-

  • Heat oil in a pan
  • Add onions
  • Cook for few seconds
  • Add green chili and ginger, stir
  • Add Cauliflower and Potatoes
  • Mix well
  • Add salt, red chili powder, coriander powder and mix well
  • Sprinkle 2 tsp water, cover and cook for 2 -3 minutes
  • Open the lid and stir
  • Add tomatoes and garam masala
  • Cover and cook untill done(5- 10 minutes)
