Gajar matar ki sabzi, a simple Indian sabzi using peas, carrots. Sometimes, we are too lazy to make dinner or lunch and want to have a quick fix. This sabzi is quick to make if you have peas, carrots and corns at home. I always keep these veggies at home in freezer section. I also added corns in this dish but you can skip if you like.
This is a also great as a side vegetable with everyday Indian dinner of dal, roti and rice.

Ingredients–
- Corns-1 cup
- Frozen Peas- 1 cup
- Carrot- 1 cut into pieces
- Ginger- 1 inch- grated
- Turmeric powder-1/4th teaspoon
- Coriander powder-1 tablespoon
- Red chili powder- 1 teaspoon
- Salt- to taste
- Mango powder- 1/2 teaspoon
Instructions-
- Mix ginger and all dry masala powder except mango powder in a lilttle2 tablespoons) water and keep aside.
- Heat oil in a pan, when hot add this masala mixture cook for few seconds and add the veggies.
- Sprinkle little water cover and cook.
- Add mango powder at the end garnish with coriander and serve hot.
- (you can precook carrot in a microwave for 5 minutes to make it even faster)
