Easy Peasy Guacamole Recipe

I love Mexican food and i find it much healthier when i make  it at home. I make quesadillas, tacos and burritos quite often but of course with lots of variations and try to use healthier alternatives as much as possible without compromising the taste. Fortunately or unfortunately there is no low fat alternative to avocado and i can’t think of Mexican food without guacamole!.
yes, avocado has lots of fat!, but its a good kind of fat that tends to lowers cholesterol and despite that avocado is extremely nutritious with lots of fiber, vitamins and minerals in it., so i think its okay to treat yourself once in a while. 🙂
and…so i  did, I made vegetable quesadillas with guacamole and salsa…yum!

Ingredients

  • Ripe Avocados- 2 (peeled, halved and seeded)
  • Onion- 1 tablespoon
  • Fresh Lemon juice- 2 tablespoons
  • Cumin powder – a pinch
  • Fresh cilantro- 1 tablespoon
  • Salt- to taste
  • Pepper- to taste
Method-
  • Mash Avocados with a fork or with a potato masher.
  • Add all the remaining ingredients and mix well.
  • Taste for the salt and adjust if required.
  • Cover with a plastic wrap and let it sit for few minutes.
  • Serve!

  4. This was a very tasty stir fry, however, don't make the same mistake I did. I used purple cabbage and the leftovers turned blue!
