Easy Spicy Eggplant/Baingan Masala(no stuffing)

This is a slight variation from the traditional stuffed baingan masala (bharwan baingan) recipe, the well known Indian dish. This recipe is so easy and yet so delicious that it will leave you licking your fingers!

Prep Time – 10 min
Cook time –  40 minutes
Serves- 3 to 4

Ingredients

 

  • Small eggplants – 6
  • Onion- 2 small (roughly chopped)
  • Tomato- 1 medium (roughly chopped)
  • Garlic- 2- 3 cloves (roughly chopped)
  • Dhania powder- 1 1/2 tblspn
  • Red chilli powder- 1 teaspoon or to taste
  • Turmeric powder- 1/2 teaspoon
  • Amchoor(mango) powder- 1 teaspoon
  • Salt – to taste

 

Method

  • Wash the eggplants, make slits and keep aside
  • Add all the ingredients except amchoor into the blender and make a paste
  • Heat oil in a wok and add the paste, cook till oil separates
  • You will have to keep stirring so that it does not stick to the bottom
  • Add the eggplants to the masala and mix well
  • Add about 1/4 cup of water, cover and cook on medium low heat till the eggplants are done and oil starts separating.
  • Garnish with coriander leaves and serve
