These Zucchini Pizza Bites are a quick way to fix your cravings and are absolutely delicious.
I got the idea for this recipe after tasting it at Trader Joe’s. It has been a family favorite since, kids love these small round pizza. They are so light that you can easily eat 10 -12 zucchini pizza bites without feeling too full.
It is a perfect way to make your kids enjoy some veggies! you can use your favorite toppings like finely chopped mushrooms, olives etc. these pizza bites can also be made in the oven.

Zucchini Pizza Bites | Low Calorie Snack
This is a recipe for quick and easy pizza bites using zucchini as the base. These bites are absolutely delicious, gluten free, egg free and much healthier than the pizza bites made using flour base.
Ingredients
- 1 Zucchini
- 1/2 cup Shredded mozzarella cheese Use as required
- 3- 4 tbsp. Pizza sauce or tomato ketchup
- 2 tbsp. Spinach leaves finely chopped
- 1/2 tbsp. Olive oil Use as required
- 1 tsp Red chili flakes Use as required
Instructions
- Cut the zucchini into 1/4th inch rounds
- Heat a pan and brush with some oil
- Place the zucchini rounds on the pan
- Cook from both sides until very light brown
- Spread some pizza sauce on each piece
- Top each piece with shredded mozzarella cheese
- Cover the pan and cook on low heat till the cheese is melted.(abt a minute)
- Top with chopped spinach leaves and chili flakes
- Enjoy!

Zucchini is rich in many nutrients and contributes to healthy digestion. Furthermore, 1 medium Zucchini only has 33 calories which is far less than when you use flour pizza crust as the base for these pizza bites. So these bites are great if you are trying eat lesser calories. Believe me they are absolutely delicious!
