Spicy Deviled Eggs with Onion Tomato Masala

Deviled eggs are always a crowd pleaser and these spicy masala eggs are definitely going to be a hit in your next party or get together. They are easy to make and very delicious.

They can be made ahead of time and kept in the refrigerator for 2 days. If you want to make these ahead of time, its a good idea to keep the filling and egg whites in separate air tight containers and assemble at the time of serving.
 

Ingredients

  • Boiled Eggs   –  2
  • Onion – 1 small (chopped)
  • Tomatoes – 1 small (chopped)
  • Freshly ground black pepper- 1/2 tsp(or to taste)
  • Coriander Powder- 1 tsp
  • Red chilli Powder- 1/2 tsp
  • Chopped coriander leaves – 2 tsp
  • Chopped Green Chili – 1/2 small(optional)
  • Salt  – To taste

Instructions-

  • Heat oil in a pan
  • Add chopped onions and cook till golden brown
  • Add black pepper, salt red chili powder, coriander powder and cook for few seconds
  • Add tomatoes and green chilies (if using)
  • Cook until the tomatoes are blended and cooked.
  • Add coriander leaves, mix well.
  • Cut the boiled eggs into halves lengthwise
  • Remove the egg yolks into a bowl and mash with the fork
  • Add the masala mixture to the yolk
  • Mix well
  • Fill the egg whites with the prepared mixture
  • Garnish  and serve.
