Deviled eggs are always a crowd pleaser and these spicy masala eggs are definitely going to be a hit in your next party or get together. They are easy to make and very delicious.
They can be made ahead of time and kept in the refrigerator for 2 days. If you want to make these ahead of time, its a good idea to keep the filling and egg whites in separate air tight containers and assemble at the time of serving.

Ingredients
- Boiled Eggs – 2
- Onion – 1 small (chopped)
- Tomatoes – 1 small (chopped)
- Freshly ground black pepper- 1/2 tsp(or to taste)
- Coriander Powder- 1 tsp
- Red chilli Powder- 1/2 tsp
- Chopped coriander leaves – 2 tsp
- Chopped Green Chili – 1/2 small(optional)
- Salt – To taste
Instructions-
- Heat oil in a pan
- Add chopped onions and cook till golden brown
- Add black pepper, salt red chili powder, coriander powder and cook for few seconds
- Add tomatoes and green chilies (if using)
- Cook until the tomatoes are blended and cooked.
- Add coriander leaves, mix well.
- Cut the boiled eggs into halves lengthwise
- Remove the egg yolks into a bowl and mash with the fork
- Add the masala mixture to the yolk
- Mix well
- Fill the egg whites with the prepared mixture
- Garnish and serve.
