This is one pot mixed vegetable pilaf made in pressure cooker. It is quick and easy to make and is super tasty.
It is also very convenient for lunch boxes. I had carrot and peas in hand so used those but you can use any vegetables you like.
The flavors come from the whole spices that we use that is Bay leaf, cloves, cinnamon, big cardamom and cumin seeds.
Enjoy this pilaf(pulao) with yogurt and your favorite chutney!
Ingredients
- Rice – 11/2 cup
- Onions- 2 medium (chopped)
- Green Peas- 1 cup
- Carrot – I cup (chopped)
- Cloves – 4
- Whole black pepper corns – 10
- Cumin Seeds – 1/2 tsp
- Red chili powder – 1 tsp
- Turmeric powder- 1/2 tsp
- Bay leaf – 1
- Big cardamom – 2
- Salt – to taste
Instructions-
- Soak rice in water for 2 hours
- Heat oil in pressure cooker
- Add all the whole spices and cook for few seconds till you start getting aroma
- Add chopped onion and saute’ till light brown.
- Add turmeric powder, chopped vegetables and Salt
- Add drained rice and saute’ for a minute
- Add 21/2 cup of water
- Put the lid and cook till 1 whistle
- Open the pressure cooker when all the steam has escaped.
- Serve hot and enjoy!
