Chicken Masala Curry

There can be so many different ways to make chicken curry. This one is quick and easy and always a crowd pleaser, comes together in under 30 minutes.

You can adjust the gravy and spiciness according your taste.

Ingredients

  • Chicken   –  1 pound
  • Onion  – 3 small(chopped)
  • Tomatoes- 2  (pureed)
  • Salt- to taste
  • Big cardamom – 2
  • Small cardamom – 2
  • Bay leaf – 1
  • Grated ginger and garlic – 2 tsp
  • Cinnamon stick – 1 inch piece
  • Turmeric powder- 3/4th tsp
  • Kashmiri red chili powder – 1 tsp (or  to taste)
  • Coriander Powder – 2 1/2 tsp
  • Cumin powder – 1/2 tsp
  • Chicken curry powder – 1/2 tbsp
  • Wheat flour – 1/2 tsp
  • Coriander leaves – to garnish

Instructions-

  • Add 1/2 tsp kashmiri red chili powder, 1/2 tsp coriander powder and 1/4th tsp turmeric powder to chicken pieces and coat well
  • Heat oil in a pan
  • Add bay leaf, small cardamom, big cardamom and cinnamon stick
  • Add chopped onions and cook for a minute
  • Add salt to taste
  • Add Ginger garlic and cook for 1 min
  • Add the remain coriander powder, red chili powder and turmeric powder
  • Add cumin powder
  • Mix very well
  • Add chicken pieces, mix well, cover and  cook for 2 minutes
  • Now add the chicken curry masala powder and mix well
  • Add the pureed tomatoes, cook for another minute
  • Add 1 1/2 cups of water, 1/2 tsp wheat flour and mix well
  • Cover and cook until chicken is cooked(about 15 – 20 min)
  • Stir in between and add more water if needed
  • Serve and enjoy with Roti, Parantha or rice
