Cauliflower and potato(Aloo gobhi) is a classic Indian dish made with cauliflower, potato and common Indian spices.
This is a quick stir fried lighter version of the dish and pairs very well with rotis, parathas or poori.
Ingredients
- Cauliflower- 1 cup(cut into florets)
- Potatoes – 2 small (cut lengthwise)
- Tomato- 1/2 sliced
- Onion – 1 small (thinly sliced)
- Green chili- 1 small (julienned)
- Ginger – 1 inch sliced
- Red chili powder- 1/2 tsp (to taste)
- Coriander powder – 1/2 tsp
- Garam masala powder – 1/2 tsp
- Salt – to taste
Instructions-
- Heat oil in a pan
- Add onions
- Cook for few seconds
- Add green chili and ginger, stir
- Add Cauliflower and Potatoes
- Mix well
- Add salt, red chili powder, coriander powder and mix well
- Sprinkle 2 tsp water, cover and cook for 2 -3 minutes
- Open the lid and stir
- Add tomatoes and garam masala
- Cover and cook untill done(5- 10 minutes)
