Homemade Veggie Mac n Cheese

Macaroni and cheese also called mac n cheese is loved by most kids. This  recipe is the healthier version of mac n cheese  loaded with veggies and homemade from scratch.  Just add the veggies of your choice and use your favorite macaroni(multigrain, wholegrain etc). Make this for kids lunch box or even as a evening snack.

Ingredients

  • Macaroni pasta – Boiled (2 cups)
  • Cheddar cheese – 3/4th  cup
  • Garlic – 1 tsp (minced)
  • Milk  – 2 cups
  • Carrot – 1 (chopped)
  • Mixed bell pepper – 1/4th cup (chopped)
  • Boiled peas – 2 tbsp
  • Salt – to taste
  • Italian seasoning – 1 tsp
  • Crushed black pepper – 1/4th tsp
  • All purpose flour – 2 tsp

Instructions-

  • Heat oil or butter
  • Add garlic and stir
  • Add chopped carrots, bell peppers and peas
  • Mix well and cook for few seconds
  • Add salt to taste, add pepper
  • Add 2 cups of milk, stir
  • Add the boiled macaroni pasta, stir and cook for about 2 minutes
  • Mix 2 tsp flour with a tablespoon of water and add to the pasta
  • Cook for 3 – 4 minutes
  • Add cheddar cheese, mix well
  • Add Italian seasoning
  • Serve and enjoy1
