Best Thai Red Curry Recipe- Restaurant Style.

Thai Red Curry is a Classic and Famous Thai dish made with red curry paste, coconut milk cooked with vegetables or meat. This red curry is very easy to make and is warm, healthy and comforting. I used vegetables but you can add chicken also if you like.

In this recipe I have used Thai red curry paste from “Thai Kitchen” and Coconut milk also from ” Thai Kitchen”. Adding some sugar, soy sauce and lemon juice gives the authentic taste and complexity to the curry. Try it with Jasmine rice and you will be a fan.

Ingredients

  • 1 heaped teaspoon of chopped garlic
  • 1/2 tsp of chopped ginger
  • 1/2 cup of diced carrots
  • 2 tbsp Paneer(cottage cheese) cubes
  • 1/2 cup of green bell pepper/capsicum
  • 1 tbsp roughly chopped onions
  • 1/2 cup mushrooms (cut into pieces)
  • 1/2 cup of chopped spinach
  • 1 tsp soy sauce
  • 1 tsp fresh Lemon juice
  • 3 tsp of Thai red curry paste
  • 1 can of coconut milk
  • 1/2 cup of water
  • Salt to taste
  • 3/4th tsp of Sugar
  • Oil to cook

Instructions-

  • Heat oil and add garlic and ginger
  • saute for few seconds until the raw smell goes
  • Add the onions and saute until translucent
  • Add carrots and green bell pepper.
  • Cook for 3-4 minutes
  • Add mushrooms and cook for another minute
  • Add in the curry paste
  • Mix well
  • Add the coconut milk, stir until smooth
  • Add water, salt to taste, sugar, lemon juice and soy sauce.
  • Let it boil then add spinach and stir
  • Finally add the paneer cubes, cook for another minute and Serve.
