Punjabi Bhindi Masala From Frozen Bhindi

A spicy preparation of Okra(bhindi) also called Lady finger with onions and Indian spices. I have used Frozen okra(Bhindi) in this recipe as frozen okra is easily available in frozen section of Indian stores and comes in handy for a quick lunch or dinner.

Okra tends to be slimy, a good trick to get rid of the slime is to keep cooking it on low flame until its no more slimy.

This bhindi masala with onions is quick and very easy to prepare and is absolutely delicious. Goes very well with roti, parathas and even rice

Ingredients

  • 1/2 onion – roughly chopped
  • 1/4th tsp turmeric powder
  • 1/2 tsp of red chili powder(or to taste)
  • 2 tsp of coriander powder
  • Salt to taste
  • 2 cups of Frozen Bhindi (Okra)
  • 4-5 tsp Water
  • Oil to cook

Instructions

  • Heat Oil in a pan
  • Add Onions and Saute for few seconds
  • Add salt, turmeric powder, red chili powder and coriander powder
  • Mix well
  • Add Okra and mix well
  • Add 4-5 tsp of water
  • Cover and cook for 3 -4 minutes until bhindi is soft
  • Remove the lid and cook uncovered on low flame until the bhindi is no more slimy, keep stirring
  • Serve hot with Roti, Paratha or rice.
