I recently came to know that boiled peanuts (the original green ones boiled in shells) are a very popular snack in Southern US too…and they are even sold on stands by the roadside..how exciting is that?! Will try to find some when I visit next!Being from north India, I had never had boiled peanuts until I went to Chennai. Had them for the first time at a Chennai beach from a thelewala and they instantly became my new favorite! they were in shells which were even tastier. Since then I boil these raw peanuts (without shells) you get in Indian grocery store every now and then and make a salad. I have also heard that boiled peanuts are the healthiest way to eat peanuts. Mmm …tasty, healthy and so addictive!
Boiled peanut salad is a favorite in our family
Here goes the recipe for boiled peanut salad…
Ingredients
Raw Peanuts – I cup Onion – 2 tablespoons (chopped finely) Tomato- 2 tablespoons (chopped finely) Green chili – 1 or 2 (chopped finely) Fresh lemon juice- 1 teaspoon or to taste Salt- to taste
Method
Soak the peanuts for at least 2- 3 hours Boil the soaked peanuts till done- (I pressure cook till 3 whistles) Drain and let them cool Now add onion, tomato, green chili, lemon and salt Enjoy!
