Cook time – 40 minutes
Serves- 3 to 4
Ingredients
- Small eggplants – 6
- Onion- 2 small (roughly chopped)
- Tomato- 1 medium (roughly chopped)
- Garlic- 2- 3 cloves (roughly chopped)
- Dhania powder- 1 1/2 tblspn
- Red chilli powder- 1 teaspoon or to taste
- Turmeric powder- 1/2 teaspoon
- Amchoor(mango) powder- 1 teaspoon
- Salt – to taste
Method
- Wash the eggplants, make slits and keep aside
- Add all the ingredients except amchoor into the blender and make a paste
- Heat oil in a wok and add the paste, cook till oil separates
- You will have to keep stirring so that it does not stick to the bottom
- Add the eggplants to the masala and mix well
- Add about 1/4 cup of water, cover and cook on medium low heat till the eggplants are done and oil starts separating.
- Garnish with coriander leaves and serve
