It is often made during navratri or festivals in India when people keep fast. Bottle gourd or Lauki also called dudhi is very low in calories, has very high water content and is fiber rich which makes it very good for  our digestive system. If you want to make it vegan friendly, you can use almond milk instead of regular milk.  </div>

<li>Bottle gourd (Lauki)   &#8211;  1 cup(grated)</li>
<li>Sugar &#8211; 3 tbsp -(adjust to taste)</li>
<li>Milk &#8211; 3 &#8211; 4  cups</li>
<li>Mixed dry fruits &#8211; 1 tbsp (chopped)</li>
<li>Ghee &#8211; 1 to 2 tsp</li>
<li>Cardamom powder &#8211; 1/2 tsp</li>
<li>Few saffron threads(kesar)</li>
</ul>

<h4>Instructions-</h4>
</div>

<li>Heat ghee in a pan and add grated bottle gourd(lauki)</li>
<li>Stir for few seconds and add milk</li>
<li>Boil the mixture on medium low flame until it reduces to your desired thickness and blended well</li>
<li>Keep stirring so that it doesn&#8217;t stick to the bottom</li>
<li>Add Sugar,  dry fruits, cardamom powder and kesar</li>
<li>Boil for another minute</li>
<li>Serve hot or cold</li>

<p>Tiramisu is a popular Italian dessert made with coffee dipped ladyfinger (crisp sugary<br />
biscuits) layered with mascarpone cheese and flavored with cocoa powder. The  classic Tiramisu  recipes use raw eggs and alcohol  but I like to  make this simple version without using<br />
eggs and alcohol. It still tastes pretty authentic and also is super easy to make.</p>
<p>Try to use crispy ladyfingers and not the soft ones as they tend to get soggy.<br />
Also the ladyfingers turn soft very quickly so don&#8217;t soak them into coffee mixture for long.</p>

<li style="list-style-position: outside; margin: 0px 0px 0px 1.6em; padding: 0px;">Now cut the lady finger into three parts, quickly dip in the coffee and arrange a layer at the bottom of the dessert cup.</li>
<li style="list-style-position: outside; margin: 0px 0px 0px 1.6em; padding: 0px;">Spread a layer of cheese, cream mixture on top and repeat till the top.</li>

<div style="clear: both;">Yes- this is egg-less, cooked in microwave, in just 1 minutes 20 sec!! What more can we ask for.<br />
This is moist and delicious. I  first came to know that a cake can be made in microwave through a magazine in library. Googled and tried few recipes. First 2 were disasters- got burnt and hard.<br />
Third time I changed the microwave power to seventy percent. Full power of my microwave is 900 watts. Adjusted sugar, milk and baking powder and that&#8217;s it. It was perfect in 1 minutes 20 seconds.</div>

<p>So I guess its important to know your microwave and do the adjustments accordingly.<br />
You may not get the brown crust when you cook cake in the microwave but it is still yummy and you can eat it right now!</p>
<p>I am going to try a healthier version with wheat flour and will post the recipe soon. Till then enjoy!</p>

<p>Sometimes simple things in life are the best. This cute cup of fruits and yogurt is a fun quick fix dessert that my kids love and can have it anytime. They enjoy every fruit I put in it, even the ones they otherwise wouldn&#8217;t eat (like plums in this recipe).</p>
<div style="text-align: left;">I kept it simple with just fruits, yogurt and honey but you can always add some variety by adding nuts, chocolate chips, crushed, cookies, granola etc.</div>

<p>I know I have not been doing justice to my blog  but I got really busy and was not making many new dishes lately. Well,  here i am again and the credit goes to our potluck lunch that we(a group of friends) have once in a while.  So I had to make dessert this time and I made Baklava  which apparently turned out great. Since everyone liked it and it was damn easy to make, thought my blog deserves a post on this too!</p>
<p>Inspired by Sandra lee&#8217;s Baklava Roll-ups, I made these rolls with some variations of my own. Hope you will like it too.</p>
<p><b>Ingredients</b></p>
<ul style="text-align: left;">
<li>Phyllo sheets &#8211;  14 (thawed as per the directions on the packet)</li>
<li>Melted unsalted Butter &#8211; 1 cup (or you can use butter spray)</li>
<li>Pistachio &#8211; to garnish.</li>
</ul>
<div style="text-align: left;"><b>For the filling</b></div>
<ul style="text-align: left;">
<li>Walnuts-  finely chopped &#8211; 1/2 cup</li>
<li>Almonds- 1/2 cup finely chopped</li>
<li>Sesame seeds- 1/3 cup (roasted and chopped) &#8211;  optional</li>
<li>Sugar- 1 tablespoon</li>
<li>Cardamom powder- 1/2 teaspoon</li>
</ul>
<div style="text-align: left;">            (You can use food processor to chop the nuts and sesame seeds)</div>
<div style="text-align: left;"><b>For the Syrup</b></div>
<ul style="text-align: left;">
<li>Water- 1 cup</li>
<li>Sugar &#8211; 1 Cup</li>
<li>Honey- 1 tablespoon</li>
<li>Vanilla extract- 1 teaspoon</li>
</ul>

<p><b>Method</b></p>
<p>For the Syrup</p>
</div>
<ul style="text-align: left;">
<li>Boil water and sugar in a pan for about 10 minutes</li>
<li>Add honey and boil for 5 more minutes</li>
<li>Add vanilla extract and let it cool.</li>
</ul>
<div style="text-align: left;"><b><br />
For the Baklava<br />
</b></div>
<ul style="text-align: left;">
<li>Mix all the ingredients for the filling and keep aside</li>
<li>Take two phyllo sheets at a time and lay on a flat surface one on top of the other, make sure to cover the rest of the sheets with damp cloth to prevent drying as they dry out very fast.</li>
<li>Brush or spray the butter on the entire surface of the top sheet</li>
<li>Spread the filling all over the surface and start rolling from one side.</li>
<li>Make sure to keep brushing the butter as much as you can while rolling</li>
<li>Grease the baking pan lightly with butter and put the rolls in the pan</li>
<li>14 sheets will make around 7 such roll</li>
<li>Bake these for 45 minutes at 350 degrees. Don&#8217;t forget to preheat the oven!</li>
<li>Keep checking after abt 30 minutes to make sure they are brown and don&#8217;t burn</li>
<li>Take them out and cut into pieces (you may also consider cutting before baking, i did after baking but I will try cutting it before baking next time)</li>
<li>Spread the syrup all over the hot baklava specially into the cuts so that it is absorbed nicely.</li>
<li>Garnish with chopped pistachio.</li>
</ul>
<div style="text-align: left;"><b>TIPS</b></div>
<ul style="text-align: left;">
<li>Serve at room temperature and keep  uncovered, they get soggy if kept covered.</li>
<li>Make sure to make sugar syrup before they are baked because you need to put warm or room temperature syrup over hot Baklava.</li>
<li>You can use any nuts of your choice for the filling.</li>
</ul>
