<p>Homemade veg sushi recipe with written  as well as detailed video instructions. We love these vegetarian California rolls so much that we make these at least once a week with different fillings each time. &nbsp;This sushi tastes divine with wasabi, pickled ginger and soy sauce!</p>



<p>It can be daunting to make sushi at home, but it is actually easier than it seems! The only thing you need is a bamboo mat, sushi rice, nori sheets and the filling. Making it at home also gives you the freedom to try different fillings.</p>

<ul class="wp-block-list"><li>Use sushi rice only- It is a short grain variety and contains a high percentage of starch which makes it so sticky.</li><li>Don&#8217;t overstuff your sushi with the filling as it may cause it to fall apart.</li><li>If you are handling sushi rice with your hands, make sure you wet your hands so it doesn&#8217;t stick to your hands.</li><li>Using a sharp knife will make it easy to cut through the seaweed.</li><li>Make sure to wet the knife before cutting sushi roll into pieces</li></ul>

<p>These roasted garlic potatoes made in oven are crispy from outside and soft from inside and absolutely delicious! You can have these as your breakfast, lunch or dinner-as a side dish or even as a main dish.</p>



<ul class="wp-block-list"><li>Boil the potatoes before roasting so the potatoes are soft and tender from inside.</li><li>You can increase or decrease the amount of garlic to your liking.</li><li>I have used baby potatoes in this recipe but this recipe works well with other potatoes as well including russet potatoes, Yukon gold potatoes, red potatoes or even with sweet potatoes.</li><li>Be sure to cut the potatoes about the same size to ensure even roasting.</li><li>Keeping the skin on is purely your choice, I prefer roasting potatoes with the skin. It just tastes great!</li><li>If you want even crispier exterior, you can roast a little longer</li><li>You can also add fresh or dried herbs of your choice if you like.</li></ul>

<div style="clear: both; text-align: left;">This is a very quick and easy way to make chole or chickpeas without onion and garlic. You can use canned chickpeas if you are in a hurry! but its best if  you  soak the chickpeas for 6 &#8211; 8 hours, boil and then add to the masala.</div>

<div>I personally prefer kabuli chana, the smaller version, but of course any chickpeas can be used.</div>

<li>Soak Chana overnight or for 6 &#8211; 8 hours</li>
<li>Boil in enough water until soft(about 10 whistles)</li>
<li>Heat some oil in a wok/pan</li>
<li>Add tomatoes </li>
<li>Cook for few seconds until tomatoes are soft</li>
<li>Add Coriander powder, Red chili powder, mix well</li>
<li>Cook for a minute</li>
<li>Add  kasoori methi, chaat masala and chana masala powder and salt</li>
<li>Add the boiled chickpeas and mix well</li>
<li>Cover and cook for 5 minutes</li>
<li>Add sugar, mix</li>
<li>Cook for few more minutes</li>
<li>Serve and enjoy!</li>

<p>Crispy rice flour crepes, Chawal ka cheela(chilla) also called Chattisgarh ka dosa is a quick and easy breakfast made with rice flour and you can add veggies of your choice if you like.</p>
<p>I like the fact that almost any flour can be made into cheela or pancake. Adjust the consistency, add some veggies and spices and spread on hot tawa/griddle. It is that easy, however the way we pour/spread makes a lot of difference in the taste and texture. Some of the flours that you can use to make cheelas are chickpea flour, whole wheat flour, broken wheat flour, oats flour, Quinoa flour, lentil flour and the list can go on.</p>
<p>In this recipe I have added spinach and onions. These cheelas are very thin and crisp and go very well with chutneys like coriander chutney, coconut or peanut chutney.</p>

<h4>Ingredients</h4>
</div>

<li>Rice flour &#8211; 1 cup</li>
<li>Water &#8211; as required</li>
<li>Spinach &#8211; chopped(1 tbsp)</li>
<li>Onions &#8211; finely chopped(1 cup)</li>
<li>Red chili powder &#8211; 1 tsp (or to taste)</li>
<li>Cumin powder &#8211; 1/2 tsp</li>
<li>Turmeric powder &#8211; 1/2 tsp</li>
<li>Salt &#8211; to taste</li>
</ul>

<h4>Instructions-</h4>
</div>

<li>Take the flour in a bowl</li>
<li>Add all the ingredients  and make a batter of runny consistency</li>
<li>Heat a griddle and apply some oil</li>
<li>Pour 11/2 tbsp of batter and spread it by moving the griddle</li>
<li>Don&#8217;t use spatula to spread the batter</li>
<li>Cook from both sides until crisp and golden brown</li>
<li>Serve with favorite chutney</li>

<p>Air fried stuffed bell pepper, as the name suggest is bell pepper stuffed with potato masala and cooked in air fryer. Very healthy yet delicious. Also called stuffed capsicum(bharwan simla mirch). </p>
<p>Bharwan simla mirch is a popular dish in North India typically made by shallow frying the stuffed potatoes.</p>
<p>I love Air frying as it saves a lot of time and reduces overall calorie intake. It is also easy to clean the air fryer!</p>
<p>It tastes great as a side dish with roti, paratha or you can even  eat it as a snack if you like. I have used spicy potato masala as a filling but you can really use any filling of your choice.</p>
<p>Here is the recipe for air fried stuffed bell pepper- Enjoy!</p>

</div>

<li>Green Bell Pepper  &#8211;  2 &#8211; 3</li>
<li>Boiled Potatoes &#8211; 2- 3 medium</li>
<li>Boiled Peas- 1 tbsp</li>
<li>Chickpea flour- 1 tablespoon</li>
<li>Coriander powder &#8211; 1 tsp</li>
<li>Red chili Powder &#8211; 1 tbsp</li>
<li>Turmeric Powder- 1/2 tsp</li>
<li>Garam masala &#8211; 1 tsp</li>
<li>Salt &#8211; to taste</li>
<li>Amchur &#8211; 1 tsp</li>
<li>Oil &#8211; as required</li>
</ul>

<h4>Make the filling</h4>
</div>

<li>Heat oil in a pan</li>
<li>Add coriander powder, turmeric powder, red chili powder, stir</li>
<li>Add boiled potatoes and peas</li>
<li>Mix well</li>
<li>Add salt and amchur powder</li>
<li>Mix well and keep aside</li>

<li>Wash and cut the top stem section of the bell pepper off and deseed them</li>
<li>Add the potato filling inside the bell pepper</li>
<li>In a seperate bowl add chickpea flour with some water and salt  to make a paste</li>
<li>Add a layer of this besan mixture  on top of the bell peppers</li>
<li>Preheat the air fryer to 400 degrees</li>
<li>Brush some oil around each bell pepper</li>
<li>Place the bell peppers in the air fryer and cook for 10 minutes or until cooked.</li>

<p>For the days when you feel like eating pizza but don&#8217;t want to wait for getting it delivered, A flour tortilla can be a great base to make a quick  pizza lunch or dinner.  This is a recipe for a very satisfying, healthy and crispy pizza made using flour tortillas baked to crispiness. </p>



<p> I topped it with garlic, onion, <a href="https://inspired-recipes.com/2010/06/quick-broccoli-and-carrot-stir-fry.html">broccoli</a>, spinach and some tomatoes. Great for a quick fix delicious meal that&#8217;s ready in minutes. I baked it on a baking sheet but if you like your Pizza very crispy, you can bake it directly on the rack.</p>



<p>For the topping</p>



<h2 class="wp-block-heading">Ingredients</h2>



<ul class="wp-block-list"><li>1 tsp oil</li><li>1/4th cup onion &#8211; roughly chopped</li><li>1/2 tbsp garlic- chopped</li><li>1 cup broccoli- cut into small pieces</li><li>Mozzarella cheese</li><li>1 tbsp tomatoes- chopped</li><li>1 cup spinach- chopped</li><li>Salt &#8211; to taste</li><li>Oregano &#8211; 1/2 tsp</li><li>Flour tortillas</li><li>Pizza sauce</li></ul>



<h2 class="wp-block-heading">Instructions</h2>



<ul class="wp-block-list"><li>Heat oil in a pan</li><li>Add garlic and onion</li><li>Stir for few seconds</li><li>Add broccoli and cook until the broccoli becomes a little tender</li><li>Add spinach and mix </li><li>Cook for few seconds</li><li>Add salt and oregano</li><li>Mix everything well</li><li>Keep aside for the topping</li><li>preheat toaster oven to 425°<em>F</em></li><li>Place one tortilla on a lined baking sheet</li><li>Spread some pizza sauce evenly on the tortilla</li><li>Spread a layer of mozzarella cheese</li><li>Add a layer of cooked toppings</li><li>Add some chopped tomatoes</li><li>bake for 5 minutes or until the cheese is melted and slightly brown</li></ul>

<p>A spicy preparation of Okra(bhindi) also called Lady finger with onions and Indian spices.  I have used Frozen okra(Bhindi) in this recipe as frozen okra is easily available in frozen section of Indian stores and comes in handy for a quick lunch or dinner. </p>



<p>Okra tends to be slimy, a good trick to get rid of the slime is to keep cooking it on low flame until its no more slimy.</p>



<p>This bhindi masala with onions is quick and very easy to prepare and is absolutely delicious.  Goes very well with roti, parathas and even rice</p>

<ul class="wp-block-list"><li>Heat Oil in a pan</li><li>Add Onions and Saute for few seconds</li><li>Add salt, turmeric powder, red chili powder and coriander powder</li><li>Mix well</li><li>Add Okra and mix well</li><li>Add 4-5 tsp of water </li><li>Cover and cook for 3 -4 minutes until bhindi is soft</li><li>Remove the lid and cook uncovered on low flame until the bhindi is no more slimy, keep stirring </li><li>Serve hot with Roti, Paratha or rice.</li></ul>

<p>Thai Red Curry is a Classic and Famous Thai dish made with red curry paste, coconut milk cooked with vegetables or meat. This red curry is very easy to make and is warm, healthy and comforting. I used vegetables but you can add chicken also if you like. </p>



<p>In this recipe I have used Thai red curry paste from &#8220;Thai Kitchen&#8221; and Coconut milk also from &#8221; Thai Kitchen&#8221;.  Adding some sugar, soy sauce and lemon juice gives the authentic taste and complexity to the curry. Try it with Jasmine rice and you will be a fan.</p>



<h2 class="wp-block-heading">Ingredients</h2>



<ul class="wp-block-list"><li>1 heaped teaspoon of chopped garlic</li><li>1/2 tsp of chopped ginger</li><li>1/2 cup of diced carrots</li><li>2 tbsp Paneer(cottage cheese) cubes</li><li>1/2 cup of green bell pepper/capsicum</li><li>1 tbsp roughly chopped onions</li><li>1/2 cup mushrooms (cut into pieces)</li><li>1/2 cup of chopped spinach</li><li>1 tsp soy sauce</li><li>1 tsp fresh Lemon juice</li><li>3 tsp of Thai red curry paste</li><li>1 can of coconut milk</li><li>1/2 cup of water</li><li>Salt to taste</li><li>3/4th tsp of Sugar</li><li>Oil to cook</li></ul>



<h2 class="wp-block-heading">Instructions-</h2>



<ul class="wp-block-list"><li>Heat oil and add garlic and ginger</li><li>saute for few seconds until the raw smell goes</li><li>Add the onions and saute until translucent</li><li>Add carrots and green bell pepper.</li><li>Cook for 3-4 minutes</li><li>Add mushrooms and cook for another minute</li><li>Add in the curry paste </li><li> Mix well</li><li>Add the coconut milk,   stir until smooth</li><li>Add water, salt to taste, sugar, lemon juice and soy sauce.</li><li>Let it boil then add spinach and stir</li><li>Finally add the paneer cubes, cook for another minute and Serve.</li></ul>

<p>Papad ki sabzi is  popular in Rajasthan India. This is a quick and easy version but tastes awesome. I use moong dal papad for the best taste. Papad ki sabzi  comes in handy when you don&#8217;t have vegetables in your house and is  traditionaly made in curd and tomato gravy. It is also rich in protein since Papad is made with lentils/dal.</p>

<h4 class="wp-block-heading">Instructions-</h4>



<ul class="wp-block-list"><li>Roast the papad on flame</li><li>Heat oil in a pan</li><li>Add turmeric powder, coriander powder, red chili powder and salt </li><li>Add 1/2 cup of water</li><li>Break the roasted papad and add into the pan</li><li>Cook until the papad is soft and water almost evaporates</li><li>Serve and enjoy with chapati/roti/parantha</li></ul>

<li>Potatoes &#8211; 2 small (cut lengthwise)</li>
<li>Tomato- 1/2 sliced</li>
<li>Onion &#8211; 1 small (thinly sliced)</li>
<li>Green chili- 1 small (julienned)</li>
<li>Ginger &#8211; 1 inch sliced</li>
<li>Red chili powder- 1/2 tsp (to taste)</li>
<li>Coriander powder &#8211; 1/2 tsp</li>
<li>Garam masala powder &#8211; 1/2 tsp</li>
<li>Salt &#8211; to taste</li>
</ul>

<li>Heat oil in a pan</li>
<li>Add onions</li>
<li>Cook for few seconds</li>
<li>Add green chili and ginger, stir</li>
<li>Add Cauliflower and Potatoes</li>
<li>Mix well</li>
<li>Add salt, red chili powder, coriander powder and mix well</li>
<li>Sprinkle 2 tsp water, cover and cook for 2 -3 minutes</li>
<li>Open the lid and stir</li>
<li>Add tomatoes and garam masala</li>
<li>Cover and cook untill done(5- 10 minutes)</li>
