Rinse and drain the sushi rice
Add rice and water in a large saucepan.
Cook on medium high heat until it starts boiling
Reduce heat to low , cover and cook for 15- 20 minutes until the water is absorbed and rice is tender.
Mix vinegar, sesame oil and sugar in a small bowl
Add the mixture to the rice and mix well.
Let cool
Cover the bamboo mat with the plastic wrap
Cut one nori into halves
Place the nori on the mat (shiny side down)
Wet your hands so that the rice doesn't stick while working
Spread a thin even layer of rice on the nori
Sprinkle some roasted sesame seeds
Gently flip rice side down
Arrange carrots and avocados
Lift the edge up and over filling
Tuck the roll firmly with your finger
Use the mat to push the roll forward
Roll and tuck again
Place the sushi roll on a cutting board
Gently press on the left and right side to neatly secure the ingredients inside
Wet a sharp knife
Using long slicing motion, carefully cut the roll into equal pieces
Enjoy with soy sauce, pickled ginger and wasabi!
